Shepards Pie

Meat & Veggie Mixture

·     1 lb. ground beef

·     1 lb. ground turkey

·     1 ½ cups carrots diced

·     1 ½ cups green beans

·     1 cup brussels sprouts

·     ¼ large onion chopped

·     2 cloves of garlic minced

·     Salt and Pepper to taste

·     1 cup beef broth

·     1 tablespoon bone broth (optional)

·     4 tbsp tomato paste

·     1 tbsp Basil

·     1 tbsp Parsley

Mashed Potatoes:

·     6-8 Russet Potatoes peeled and cut into 2’’ pieces

·     2/3 can of full fat coconut milk (blend prior to adding)

·     2 Tbsp ghee 

·     Salt and Pepper to taste

·     Parsley to garnish

·     3 Tbsp Nutritional Yeast (Optional)

Instructions

Potatoes:

1.    Heat water in double broiler. Bring to a boil. Add cut up potato pieces and cook until very soft.

2.    Drain water and place steamed potatoes in pan. Add ghee, coconut milk , nutritional yeast and season with salt and pepper. Mash potatoes or use a hand mixer to mash until smooth. 

Beef Mixture:

1.    Preheat oven to 375 degrees

2.    In deep oven proof skillet ( I use a cast iron large skillet), add ground beef and ground turkey. Brown over medium heat breaking up lumps with spoon and draining grease. Remove browned meat with a slotted spoon and set aside.

3.    Add 1 Tbsp of ghee to cast iron skillet. Add onions and garlic and season with salt and pepper. Cook until softened. Add brussels sprouts, carrots and green beans to skillet. Season with salt and pepper. Stir and then cover the skillet to cook vegies until soften. To speed this step up you can also use frozen veggies or whatever veggies you have on hand.

4.    Add the remaining ingredients; beef broth, bone broth, tomato paste and seasonings to the skillet, stir to combine. Add meat to skillet and stir to coat. Simmer for 2-5 minutes or so to thicken the sauce and blend flavors.

5.    Spread the mashed potatoes over the beef mixture and use a spoon to smooth the top. Sprinkle with parsley, then place the skillet in oven. Bake for 20-25 minutes until sauce is bubbling and the top begins to turn light brown.

6.    Remove from oven and allow to sit for 5-10 minutes.
