Avocado Tuna Salad
This quick and easy lunch will be a new favorite. It’s packed full of healthy fats including Omega 3s and avocado. You can easily add hard boiled eggs, a splash of fresh squeezed lime and a drizzle of olive oil for an added twist! Make this up ahead of time and take it with you on the go.
1 - 5 oz. can (or 2-2.6 oz pouch) of Albacore White Tuna in water (check your label for added ingredients)
1 ripe avocado
1 carrot chopped
1 celery stalk chopped
2 tablespoons fresh squeezed lemon or lime
1/2 teaspoon dill weed
1/8 teaspoon smoked paprika
In medium bowl, mash together the tuna and avocado. Add the remaining ingredients and mix well. Serve over a bed of fresh greens (spinach, kale, arugula).
